South Indian cuisine includes the cuisines of the five southern states of India -Andhra Pradesh, Karnataka, Kerala, Tamil Nadu and Telangana and the union terriories of Lakshadweep, Pondicherry, and the Andaman and Nicobar Islands. The similarities among the five states cuisines include the presence of rice as a  staple food, the use of lentils and spices.Batter made by Soaking rice and black lentils(de- husked), grinding, then fermenting .From fermented batter can make three popular breakfast food 1-Idli soft savoury  cake, 2-Dosa-type of savoury crepes, 3-Uttapam- type of savoury thick pancake topped with vegetables.   • Urad dal – 2 cup
  • Rice flakes-1/2 cup
  • Rice -4 cup
  • Fenugreek seed-1 tsp
  • Salt – 1/2 tsp
  • Sugar – 1/2 tsp
  • Baking soda – 1/2 tsp
  • cooking oil-2 tbsp
